American eggplants are a flat purple shade so dark it almost looks black. But Indian eggplant while still dark has a warmer, reddish hue that’s much more appetizing. To mimic the color in hair thin strips of burgundy are blended with a deep violet brown to create a dappled, earthy hue that’s richly pigmented but not too vibrant.
